In the heart of Paris, a technological transformation has arrived in the world of gastronomy. Pazzi, the first autonomous pizza robot , has completely transformed the way we think about pizza making , combining high technology and culinary craftsmanship.

Pizza robot transforms the kitchen in Paris

This ingenious device is capable of preparing and baking up to 80 pizzas per hour , all without the need for intervention from a chef. From dough to delivery to the customer, the robot performs each task with precision thanks to a team of 28 engineers who dedicated seven years to its development. Co-founder Sébastien Roberso highlighted the complexity of the project, mentioning that “ it wasn’t just a robot that was built; an entire automated ecosystem was developed, including ovens and washing systems .”

In addition, expert pizza maker Thierry Graffagnino, a three-time world champion, was tasked with fine-tuning the recipes to ensure that each pizza maintains the expected quality. The robot features advanced sensors that monitor and adjust the process, ensuring that the pizzas meet high standards. If the dough is not perfect, the robot discards it , maintaining quality control.

However, the restaurant still needs human employees to provide a touch of warmth and solve tasks that the robot does not perform, such as cutting ingredients. This collaboration shows how technology and human work can coexist, optimizing efficiency without sacrificing culinary tradition.

Pazzi ‘s innovation does not seek to completely replace the artisanal experience but to enhance it. In a context where robotics and artificial intelligence are increasingly integrated into various industries, this restaurant poses an intriguing question about the future of cooking: will it be possible to combine technological speed with human quality? Pazzi seems to be telling us yes.
